Dalma

A delicious Indian stew of dal and vegetables from the authentic Oriya cuisine:

Ingredients:
Tuhar dal : ½ cup, chana dal : ½ cup, potato : 1, yellow pumpkin : 150 gm, brinjal : 1, raw banana : 1, papaya : ½, small ginger : 1 inch piece, fresh coriander leaves : few sprigs, cumin seeds : 1 tsp, red chillies whole : 4, turmeric powder : 1tsp, sugar : ½ tsp, oil : 1 tsp, panch phoran : 1tsp

Method:
1) Peel, wash and cut potato and pumpkin into one inch sized pieces. Wash and cut brinjal, banana and papaya into half inch pieces. Peel, wash and mince ginger, wash and chop coriander leaves.
2)Dry roast one teaspoon of cumin seeds and red chillies in a pan and powder both.
3)Boil four cups of water and add dals, coconut, salt, minced ginger, turmeric and cook until dals are half done.
4)Add potato, pumpkin, brinjal, banana and papaya. Cook until vegetables become tender. Add sugar and mix well. Adjust salt. Heat ghee or oil in a pan add panch phoran and fry till the seeds, splutter. Add the cooled dal.
5)Sprinkle roasted cumin seeds and chilli powder. Garnish with coriander leaves and serve with steamed rice.

It really sounds very tasty. Can any one elaborate the contents of Panch Phoran. I think by adding 1/2 of grinded coconut will add to the taste.
